Healthy Deal of the Week: Toddler Oatmeal Bites

These very yummy bites are made with whole grains and just enough sweetness that your toddler will eat them right up! They're a great solution for us moms that want to give our little ones a treat, but don't want highly processed, artificial cookies. Why are these the deal of the week? Because they're cheap! Check out the ingredients....you probably already have them. And of course, they freeze very well. In fact, we eat them right out of the freezer! This recipe (adapted from wholegraingourmet.com) makes about 54 toddler-sized bites.You'll need: 1 c whole wheat flour 1 1/2 cups rolled oats 1/2 tsp. baking soda 1/2 tsp. baking powder 1/8 tsp. salt cinnamon and nutmeg as desired 3/4- 1 c of chocolate chips 1/2 cup honey 1/2 cup applesauce (I use the flavored no-sugar added snack packs, like Mott's Peach Harvest) 1 egg (beaten with 1 tbsp. water)

Preheat the oven to 335 degrees. Mix the dry ingredients in a large bowl. Mix wet ingredients in another bowl and then combine the wet with the dry; don't overmix! I use a small scoop for 12 cookies per pan.

Bake at 335 degrees for 13-15 minutes or until the edges are golden brown.

Let the cookies cool on a rack for about 5-10 minutes...if you can wait that long! When cooled, pack in a freezer-safe container. Now for the best part...eat and enjoy!! Happy baking (and freezing)!
